Great British Brownie Off
Who’s watching the Great British Bake Off this evening? We’re super excited here at Look Again and thought we’d get in the baking mood. These salted caramel chocolate brownies are an easy bake for the most novice of bakers.
You’ll need:
- 200g unsalted butter. You’ll need a little extra for greasing
- 100g 70% cocoa solids chocolate
- 100g 50% cocoa solids chocolate
- 397g can of Carnation caramel
- 1tsp flaky sea salt. Plus a bit extra for the top
- 200g golden caster sugar
- 3 medium eggs – they’re best at room temperature
- 130g plain flour
- 50g cocoa powder
How to Bake
1. Heat the oven to 180C or gas
2. Grease a baking tin (approx 23cm square) and line with baking parchment
3. Melt the butter in a medium pan, then break up the and add the chocolate. Remove from the heat whilst the cubes melt
4. In a small bowl, mix 175g of the caramel with 1tsp of sea salt
5. Whisk the rest of the caramel with sugar and eggs in a separate large bowl. Then whisk in the melted chocolate and butter
6. In another bowl, combine the flour, cocoa and pinch of table salt, then add this to the chocolate mix and beat until the consistency is smooth
7. In the baking tin, pour half the brownie batter into the tin and level it with a spatula. Then spoon half of the salted caramel on top of the batter in 5 thick stripes that are evenly spaced. Repeat these methods with the remainder of the batter and caramel. This will create a 4 layer design, without disturbing the layer below. For a feather pattern, drag the top of the knife trough the top layer of caramel.
8. Finally, add a little more sea salt on the top and bake for 35-30 minutes, or until risen with a firm crust on top. When the brownies are baked they will jiggle a little if the tin is shaken. Cool completely in the tin, then cut into even portions.
