Ingredients:
This recipe uses home grown apples which are at their best at this time of year; however pears and soft fruit combinations work equally as well.
150g plain flour
50g rolled oats
100g light brown sugar
½ teaspoon ground cinnamon
¼ teaspoon ground nutmeg
Pinch salt
150g butter, cut into pieces
120g walnuts, chopped
For the apples
60g caster sugar, or to taste
1 tablespoon cornflour
½ teaspoon ground ginger
½ teaspoon ground cinnamon
800g cooking apples – peeled, cored and chopped
2 tablespoons lemon juice
Method:
Place the flour, brown sugar, oats, spices and salt into a large mixing bowl. Add in the cubed butter and rub in with your fingertips until a breadcrumb style mixture is achieved.
Stir in the walnuts and set aside.
In a small bowl, mix together 1 tbsp of the caster sugar, cornflour and lemon juice.
In a further small bowl combine the remaining sugar and the spices.
Place the prepared apples into the slow cooker bowl in layers, sprinkling the flavoured sugar between, pour over the cornflour mixture.
Top with the crumble, cover and cook on High for 3 hours or Low for 4-5 hours, until the apples are tender.
Once the cooking time has elapsed, partially uncover the slow cooker for approx 1 hour to allow the crumble topping to firm.
Serve with hot creamy custard or vanilla ice cream.
